In the wake of the announcement that celebrity chef Charlie Trotter and the Elysian Hotel and Private Residences parted ways this winter, Elysian today announced two replacements: executive chef Jason McLeod and pastry chef Mindy Segal. Neither toque enjoys Trotter’s name recognition, but Elysian says they will bring a unique brand of seasonal and locally-sourced food to Elysian’s two restaurants and catering operations.

Segal, who is described as “the master of sweet indulgence” in the release, is probably the better-known of the two among local foodies, because she is the owner of the popular Bucktown restaurant HotChocolate. McLeod is coming from the Grand del Mar resort in San Diego, and has worked at several Canadian Four Seasons hotels.
